Pasillas are dried "Chilaca" chilis and are also known as "Chile Negro". The name Pasilla means "raisin" and refers to the colour and look of the dried fruits. The pods that can grow up to a length of 25cm have a very sweety taste combined with a slightly smokey aroma. Just like Ancho and Mulato chilis they belong to the main ingredients in the mexican national sauce Mole.
Before using your Pasillas they should rest in hot water for 10-15 min.
